A Filling Built on Slow Herb Extraction
Before our fillings are prepared, we create our own fresh herb oil using a process familiar to professional kitchens.
Fresh herbs and carefully selected spices are gently infused over low heat for four hours. The oil is then rested for a further twenty-four hours, allowing aromatic compounds to fully develop and stabilise before being incorporated into the filling.
In culinary terms, this is a controlled flavour extraction, not simply mixing herbs into oil.
The result is a cleaner, more rounded flavour profile with natural aromatic depth in every bite.
