That’s why making dumpling wrappers is a craft of its own.
Producing high-quality wrappers consistently requires much more than flour and water. Dough development is influenced by humidity, temperature, hydration, resting time and rolling technique. Even small variations can change the elasticity of the dough, how easily it can be folded, and how well it holds its shape during boiling, steaming or pan-frying.
The choice of flour is equally critical.
Protein content determines gluten development, directly affecting the wrapper’s strength, flexibility and bite. Too much protein can produce a wrapper that is overly firm and chewy. Too little can make it fragile and prone to tearing. Achieving the right balance requires careful flour selection, process control and continuous refinement.
For this reason, many dumpling brands and restaurants in Japan source their wrappers from specialist manufacturers whose expertise is dedicated entirely to dough production.
We chose a different approach.
Instead of separating wrapper production from dumpling production, we decided to master both.
Every wrapper is produced in Switzerland using Swiss flour. Every filling is prepared in-house. Every dumpling is assembled under one roof.
This allows us to control every variable—from flour selection and dough development to wrapper thickness, elasticity, cooking performance and the final balance between wrapper and filling.
For chefs, consistency is just as important as flavour.
A wrapper should fold cleanly, resist tearing during service, maintain its texture after cooking and complement rather than overpower the filling. Those characteristics cannot be achieved by chance—they are the result of carefully controlled production.
